Watermelon Rind Juice

Select a nice big watermelon. Wash it before cutting into it. You'll also want a large cutting board, a large knife, a small knife and containers to store the fruit and rind that you don't use at this time.
Ingredients:

Wash watermelon.
Determine how much of the melon to use. I personally like to save most of the fruit part of the melon for watermelon smoothies. I dice up the fruit and put it in the fridge for later use.
Slice up the rind/melon into manageable sizes for your juicer.
Run it through your juicer.
Optional: Strain through a fine mesh strainer for less pulp.
Serve and Enjoy.
Note: I’ve kept excess watermelon juice in the fridge for a couple days. However, I think it is better when it is fresher.
