Carrot Juice

Select some high quality carrots - amount of juice will vary depending on how much juice you're making and how big the carrots are.

Ingredients:

Carrots

Rinse your carrots

Use a vegetable peeler to peel them

Cut them into manageable sizes for your juicer

Put them through your juicer

Strain through a fine mesh strainer

Serve and Enjoy

Note: I don't cut or peel baby carrots. I just put them though my juicer. It's still a good idea to rinse them though.

Note: You can put the pulp off to the side to make other things like carrot crackers or veggie patties.

Note: I have juiced and then stored the juice in the fridge for a couple of days. However, I feel it is best when it is fresher. Additionally, it seems to become more bitter tasting the longer it sits as it starts to go bad.

Note: I enjoy using a Green Star Twin Gear Juicer. In my experience, it gives the most juice from fruits and vegetables. In my deli, I also used a Champion Juicer when I needed to create juice more rapidly. However, I can take the pulp from the Champion and run it through the Green Star and obtain additional juice. If you're using the pulp for other recipes, then both of these juicers would be good choices.
